Creamy Piri Piri Chicken Casserole

MACROS Per Serving (Serves 4): 414kcal, C42g, F8g, P41g

Includes 125g of Microwaveable Rice

(Macros may vary depending on brands used)

Cook: 60min

Ingredients:

500g Chicken Breast Chopped

2 Red Onions Chopped

2 Yellow or Green Peppers cut into chunks

2 tbsp dried Piri Piri Spice

(You may want to use 1tbsp if you don’t like HOT dishes)

100ml Low Fat Crème Fraiche

100ml Chicken stock

Method:

1.Preheat the oven to 180 degrees

2.Mix the piri piri spice & chicken

stock in a bowl

3.Place the peppers, Onions & Chicken Chunks in a deep sided baking dish

4.Add the Piri Piri/Water mix and stir through

5.Cover with tin foil & bake for 45mins

6.Remove from oven & add the crème fraiche & stir through

7.Cover & return to the oven for a further 15min

8.Serve with Rice
