All In One Chicken Traybake

MACROS Per Serving (Serves 4): 520kcal, C44g, F24g, P35g

2 tbsp olive oil
4 chicken breast
750g New potatoes, sliced
Large pinch dried thyme or fresh if you prefer
4 garlic cloves, peeled but left whole
450g jar mixed roasted peppers, cut into bite size chunks 2 oranges cut into segments (6 each)
200g pitted black olives in brine, drained


  1. Heat Oven to 200C/180C Fan/gas

  2. Heat 2 tbsp oil in a large flameproof roasting tin or large pan (If you don’t have one big enough

    to do the chicken & potatoes together, do the potatoes first then remove & set aside, before

    cooking the chicken)

  3. Then fry the chicken & potatoes for aprox 8-10min or until the chicken is golden

  4. Add the thyme & garlic, stir to coat everything

  5. Roast everything for 15mins until the potatoes are soft. Remove the tray and throw in the

    peppers, orange segments & olives and roast for a further 5mins. Ensure Chicken is completely

    cooked before serving

  6. Serve into individual bowls or bring the tray to the table and help yourself
