Caribbean Salmon

NOTE: Dish requires marinating for 30mins (Method number 1)

MACROS Per Serving (Serves 2): 537Kcal, C41g, F28g, P 30g – Includes 250g Microwave Rice (Macros may vary depending on brands used)

Cook: 15min


Ingredients: 

2 Garlic cloves, finely chopped

1 lime, finely zested then halved

1 tbsp Jerk Seasoning

½ tbsp. fresh thyme leaves

1cm piece of fresh ginger, finely grated

1tsp light olive oil

2 Salmon Fillets wit skin on

100g Green beans

125g rice to serve

Optional:

20g Sweetcorn 

Chopped Cherry Tomatoes 

Coriander 


Method:

  1. Mix together garlic, lime zest, jerk seasoning, thyme, ginger and oil, smear over the salmon & marinate for 30min

  2. Place the fish on a griddle pan or under a grill for around 5mins or until cooked to your liking. (Using a griddle pan gives the BBQ lines on the fish & Lime) 

  3. Boil Green beans for aprox 4-5mins or until soft

  4. Meanwhile, microwave the rice and mix with corn, chopped tomatoes & coriander

  5. Add the limes halves to the griddle or grill until griddle lines appear (aprox 2-3mins)

  6. Serve the salmon with the green beans and Rice mix. Garnish with the lime
