Get Peachy Paella

MACROS Per Serving (Serves 4): 531kcal, C48g, F13g, P53g

Ingredients:

500g Chicken Breast – cut into chunks

1 Large Red Pepper – Cut into chunks

200g Paella Rice

1 onion chopped

4 garlic cloves – finely chopped

1 tsp smoked paprika

1 tsp tumeric

80g Chopped Chorizo

200g Frozen Peas

2 Chicken Stock cubes (750ml made up)

Spinach (optional)

100g Cooked King Prawns (optional – Macro/calorie count doesn’t include the prawns)

Method:

1. Spray a large pan with low kcal cooking spray – high heat

2. Add the Chicken, Onions, Chorizo & garlic – cook until the chicken is cooked through

3. Lower the heat and add the Paella Rice and spices. Mix and fry for a minute or so

4. Add the stock & peas then simmer for around 15mins or until the stock is soaked up. Make sure you stir so

the rice doesn’t stick to the bottom

5. Add the spinach & Prawns towards the end – Simmer for 5mins

6. Serve
