Sausage & Bean Casserole

MACROS: 560 Kcal, C65g, F12g, P43g (Macros may vary depending on brand of ingredients used)

Serves 1 (Macros are FAB so can easily split this amount between 2 people allowing an extra sausage ☺ )

Ingredients:

1 Onion (Sliced)

1 Cubed Green Pepper

2 cloves garlic (chopped)

1 tbsp Tomato Puree

200g Halved Cherry Tomatoes

1 chicken pot stock

100ml Boiling Water

1 drained can of chick peas or Cannellini Beans

2 Bay Leaves

1 tsp dried thyme

Salt & Pepper

2-3 Chicken or Turkey Sausages (I highly recommend the Sweet Chilli Turkey Sausages from ASDA)

OPTIONAL: 1 Whole Red Chilli

Method:

1. Spray a pan with low cal cooking spray and add the onion, pepper & garlic. Heat gently until softened

2. Stir in tomato puree and add cherry Toms, stock pot, Water, Beans, bay leaves, thyme & salt/Pepper to taste

3. Simmer for 20min (optional – Add a whole red chilli (pricked with a knife) to add some heat

4. Meanwhile cook your sausages

5. Serve your casserole topped with your Sausages, sprinkle with some fresh parsley & DEMOLISH
