Chicken, Bacon & Leek Cheesy Cottage Pie (500 Calories)

Ingredients

  • 3 Chicken Breasts (500g-600g)

  • 100g Bacon Rashers

  • 600g White Potatoes

  • 2 Sliced Leeks

  • 50g Low Fat Creme Fraiche

  • 15g Butter

  • 50g Light Mature Grated Cheddar

  • 10g Plain Flour

  • 250ml Chicken Stock

  • 1 Tbsp Olive Oil

  • Splash of Milk

  • Handful Fresh Parsley (Chopped)

  • Salt & Pepper

Method

  1. Peel and chop potatoes, then boil ready for mashing later.

  2. Dice chicken breasts, bacon and slice leeks.

  3. Heat olive oil in a large frying pan, add the chicken and bacon and cook until golden. Add the leeks and cook for 2-3 mins or until soft. Scatter over the flour and stir until absorbed.

  4. Gradually pour in the stock then cook for 5 mins, or until chicken is cooked through. Preheat the grill to it’s highest setting, stir in the creme fraiche into the chicken mixture and season well. Carefully pour the mixture into a large baking dish.

  5. Take the potatoes off the boil once cooked through. Add butter/marg, splash of milk, 3/4 of the grated cheese and parsley and mash!

  6. Spoon the mashed potatoes evenly over the chicken mixture, fork the top, then sprinkle the extra cheese over the top. Grill until the topping is golden and crisp, then serve with some veggies and gravy if you like!
