1 Tray Fajita Bowl (New!)

  • 2 Chicken Breasts

  • 1 Red Pepper

  • 1 Yellow Pepper

  • 1 Courgette

  • 1 Red Onion

  • 1 Sweet Potato

  • 1/2 Packet Fajita Seasoning

  • 1 Tbsp Olive Oil

  • 2 Handfuls Spinach

  • 8 Small / 2 Large Tomatoes

  • 2 Tbsp Quark (Yoghurt/Sour Cream Would Also Work)


  1. Pre heat the oven to 180.C

  2. Chop up all of the veg to similar sizes, I like to cut everything into strips. Leave the skin on the sweet potato to retain the fibre!

  3. Slice the chicken breast into strips

  4. Chuck everything into a tray and add the tbsp of olive oil and fajita seasoning and mix until everything is covered

  5. Bake in the oven for 30 minutes

  6. Dice your tomatoes to get a salsa texture

  7. Place a handful of spinach into 2 bowls and then top with your cooked veg and chicken, a tablespoon of quark (or alternative) and finish with your fresh tomato salsa

Pumpkin seeds, avocado and fresh coriander are also great toppings, this recipe is a great one to batch cook and keep ready for lunches!
