Cottage Cheese Jelly Mousse

Ingredients:

300g Low fat natural cottage cheese

1 sachet sugar free jelly powder (I used Raspberry)

250ml Boiling water

Method:

1. Dissolve the jelly powder in 250ml Boiling water, stir until completely dissolved. Allow to cool slightly

2. In a blender or food processor, mix the cottage cheese & dissolved jelly mix until smooth

3. Transfer to 4 jars, glasses or bowls & refrigerate for 2-3 hours. Top with fruit of your choice
