Sweet Potato Protein Brownies

1 Medium sweet potato (around 300g)

100g Peanut Butter

25g Unflavoured Whey Protein

2 tsp Cocoa Powder

1 tsp Sugar/Sweetener

25g Melted Chocolate


1. Prick the sweet potato all over with a fork & microwave for 8-10minutes. (OR….. Peel & cube and

cook in microwave for the same time)

2. Preheat the oven to 180 and grease or line a brownie tin

3. Once cooled scoop out the inside of the sweet potato and mash until smooth. If you cubed the

sweet potato, simply mash until smooth

4. Add the peanut butter, whey protein, cocoa powder, sugar and melted chocolate mix until smooth

5. Pour the mixture into the brownie tin. Using a fork or spoon spread the mixture along the whole of

the tin making it level

6. Bake for around 20minutes, until the top is well cooked

7. Remove the brownie tin from the oven, let it cool for a few minutes and then slice into 8 pieces
