Carrot Cake Bars (New!)

Macros Per Square (Makes 12)

Kcal : 148, P : 5g, C : 20g, F : 5g, Fibre : 2g

Ingredients

  • 3 Eggs

  • 50g Sugar

  • 2 Tbsp Coconut Oil

  • 2 Carrots

  • 1 Apple

  • 150g Oats

  • 75g Plain Flour

  • 1 Tsp Baking Powder

  • 1 Handful Sultanas

  • 1 Handful Chopped Walnuts

  • 1 Tsp Cinnamon

  • 1/2 Tsp Nutmeg

Method

  1. Combine 3 eggs, 50g of sugar and tbsp of melted coconut oil in a bowl and whisk

  2. Grate in 2 carrots and 1 apple and stir until combined

  3. Add 150g oats and 75g plain flour, 1 tsp baking powder and fold through

  4. Add 1 handful chopped walnuts, 1 tsp cinnamon and 1/2 tsp nutmeg

  5. Pour into a baking tray lined with baking paper and bake at 180.C fan for 35 minutes

  6. Allow to cool before cutting into 12 equal squares. I like to top mine with cream cheese mixed with orange zest and honey and a sprinkle of cinnamon (not included in macros)
